I was referring to the traditional English banger.....they used to be made with offcuts/dubious meat sources when I was a kid. They are much better now.
it wasn't just the english banger, sausage though tasty was poor folk food. And it could be cured, dried and would keep with little to no refridgeration it became popular in various incarnation all over. And with spices and salt you could hide anything in there. Home made sausage would be a bit 'cleaner' but the commercial butcher had a 'place' for all the offal.
