My VFR800 goes up to 104 and the fan kicks on.. drops to about 98 or so and then stops. What's the big deal? That's within spec.. and I'm sure the Honda engineers know a lot more than we do when it comes to designing the bike and why the fan kicks on at that time.

One of the reasons why tach's are going digital is because an analog signal sometimes isn't fast enough to show true revs. A digital tach can rev up to any speed in a split second.
