For me, it's lane-splitting or filtering. I love seeing traffic all backed up when I'm gonna make a right turn and working my way in. I love how technical you have to get with the clutch, gas, and rear brake and how at some point my bike's pretty much sideways/leaned over and I'm still in complete control (I remember this one time where there was a tight spot that I had to filter through, so I skidded sideways to get the tail aimed properly to fit through the gap). Also, please, no lectures about reckless riding, I leave enough room for a margin error.
But I think what I love the most about riding is that it's a big game of logic to me. You analyze probabilities of what other drivers are going to do, you leave enough room to stop or gas it in case you guess wrong, and you win when you arrive alive

It used to be an even split between riding aggressively, but I think that was just to find out whether I was good enough to do it. Now, I enjoy cruising much more.
Also, I don't think there's any shame in posing. I do it sometimes. But to each their own.
