What's the one thing you always forget or wish you'd brought on long trip on 2 wheels?

I also carry a zip lock bag with inline fuses, various length of electric wires and posiloc electical connectors. I have had to use the inline fuse when I was on a 2 hour trip and 1/2 hour from home. The wires and other fuses I've been able to help other riders who were stranded. There are many places to stash stuff like that on a bike. Only thing is to remember you have it. Each trip I make a list and take off or add what I used. It is a moving target for sure.
Check the contact cement and other glues over the years as they evaporate or harden and you have to refresh them.

I carry fuses with me as well. Blew a fuse on my bike, opened up the fusebox and lo and behold, the manufacturer had made extra space in the box that they filled with a couple of replacement fuses...

Checked my other bikes. All have additional replacement fuses inside the fusebox.

Yep, also, check tire gummies, they harden over time.

Plus, top up the battery in your mobile jump starter or portable tire compressor, they will drain even if left unused over a season or two.
 
Yeah, you can go down quite the rabbit hole on which tools to bring.

I think the basics are fastening and lubricating. 100mph tape, heavy duty zipties and a small can of WD40 are the minimum, IMO. I add JB Weld to the list, but that may be overkill for a lot of folks on road rides. I also carry a small ziplock bag full of miscellaneous nuts, bolts and washers of differing sizes.

This is our basic kit for the big bikes (chain lube, engine oil, WD-40 in another bag)

People seem to carry fuel in those MSR bottles. Are they any different than a regular water bottle?

The MSR bottles were originally designed to screw into their MSR stoves, which work on pressurizing the gas with a hand pump (red plunger on the left of the pump):

I'm guessing the pressure from this technique would be similar to the expansion caused by temperature changes while just merely storing gasoline.

The bottles are "constructed from impact-extruded aluminum with no seams or welds, these fuel bottles resist cracks, leaks, and bulging when pressurized. Threads machined into neck ensure a longer lasting seal." (from the website description).

So a bit more robust than a water bottle.
 
A small cover to keep dew off of the seat.

I don't put much stock in marketing hype.

Edit: A quick google showed most aluminum water bottles are "impact-extruded"

Riding along the Trans Canada somewhere in Saskatchewan... VERY windy day.
Cross wind perpendicular to the hwy making us ride along in a permanent 45° lean... 'fighting to not get blown off the road.
I lose sight of my buddy behind me and pull over to wait...
Five minutes later he pulls up...
"The wind blew one of my lenses outta the frame"
Luckily it just blew off and got wedged between his head and the helmet liner...
'Had to take time to find an optical place to repair as those were the only glasses he brought
