What's for dinner?

@mbroyda Only yesterday did I find out that there is something called "pescatarian" (sp?) where you are vegetarian + fish.
He is not eating fish, and not going vegan so my understanding is that dairy and eggs are ok.

As he doesn't really talk to me, he hasn't really said why he's dping this. I think it may be an environmental thing, though.


On a side note, just got back from the grocer and saw they have cauliflowered rice.
I've seen it in meals on insta, and thought this might be good for me as I am trying to eliminate some starchy simple carbs from my diet. Anyone tried it or tried cooking it?

A breakfast fridge concoction here. I was going for omelet but ran out of eggs, so this has less eggs than that but with Chinese sausage, diced chipotle pepper in adobo sauce, onion, minced fresh garlic, salt, pepper, chopped yellow sweet pepper and cashews. Served with optional green habanero MX hot sauce on the side.

Fresh cherries and a Caesar salad. I used premium Rene's Mighty Caesar dressing (strong), fresh squeezed lemon juice and buttered croutons on the salad.

Costco has some chicken, jalapeño and mango sausages. I don’t like to dismiss something out of hand so I took it upon myself to try them. Delicious! The mix of flavours works well. Can't remember the brand offhand but there aren’t going to be too many sausages in Costco like this but give them a try. They BQQ well.

I did another summer turkey this year. I got the13-14 lb turkey on sale for $8 just after Christmas and had it in the freezer. Done on the Weber Summit rotisserie. It came out great and had beautiful crunchy skin.

The rack helps keep the cooked skin fresh and tasty on the bottom of the bird.

I kept this meal basic with turkey, mashed potatoes, gravy and stuffing (plus cranberry sauce which I forgot to put in the picture).

Here's the scratch cast iron skillet made stuffing (using my mother's recipe). It's a large cast iron pan ;).

Leftover turkey with cranberry sauce, mashed potatoes and gravy. The gravy from drippings was excellent. I used mashed garden red potatoes (with some cream cheese, butter and milk this time). In leftover meals I like to pull the skin off and recook it in a non-stick skillet under med-low heat. It concentrates the flavors and brings some texture back.

I saved some turkey meat and the carcass in the freezer for future Instant pot Turkey carcass noodle soup :). I'll have to post it up when I do it again.

Neopolitan pizza dough finally mastered. Bubbled nicely with a crisp outside and a chewy inside. Cooked with sliced portabello mushrooms and 2h caramelised onions to bring out the flavour. Dough was with just flour water salt and yeast. Hopefully I'll find the Italian tipo 00 flour for next time. This was with 1 part bread flour to 4 part all purpose. Sauce made with Balkan eggplant and red pepper spread blended with lemon juice, olive oil, vidallia onion, and sun dried tomatoes.

. I picked this up at the local grocer on sale. Mediterranean herb and spice marinated fresh Atlantic salmon which I grilled on the Weber Summit, plus more fresh strawberries and cherries. Easy, simple and tasty

The salsa has fresh onion, roma tomato, chipotles with adobo sauce and Newman's Own medium salsa (forgot to add my fresh Italian parsley).

The guacamole is full scratch with fresh roma tomato, yellow sweet pepper, onion, onion stalks, one fresh squeezed lime, pepper, salt, cayenne pepper and diced garlic. Excellent.

anyone ever try the Keto method?
all the animal protein you want
dairy is fine, and low starch veggies
basically avoid carbs and sugars

appeals to me because it would include a lot of grilling :)

I follow a few Keto dieters on Insta. Seems to work for them.
A bunch of people at work are doing it too. They all seem to have lost weight.
My problem is that I freaking love my carbs!

@JoeBass you had asked about cauliflower rice in an earlier post. Ate it quite often when we did Whole30. I was quite skeptical but pleasantly surprised.
It can get expensive buying the packaged stuff but you can prepare your own with a fresh cauliflower and a grater. Easy to portion it and can be frozen until needed.
My wife would just fry it up and season to taste.

The stars recently aligned for a dedicated focus on seasonal fruits. I picked up a fresh cut/cored pineapple, fresh dark cherries, two lbs fresh strawberries and a large fresh seedless premium watermelon... all on sale at the local grocer :) (e.g., the watermelon was ~ $3). This is too much fruit to do anything with but eat as entire meals, repetitively. It was great. And variety is always excellent. Hop aboard the fresh fruit train! Enjoy.

Not gourmet but I tried McD'd fish and chips. They didn't kill me but the fish and chip shops don't have to worry. Two small portions of fish (Think fish sticks) and the usual fries. No cole slaw.
 
Here's a recent meal; fresh thick cut grocer lamb shoulder chops with light rosemary marinade. I picked this up on sale and ended up super happy. Grilled on the Weber Summit to a medium-rare to medium finish. This was one of the best meals I've had in a long time. Very very tender, and just a nice light lamb flavor (and light marinade flavors)... oily good as well. Highly recommended (especially when you can find a good lamb source)

Fresh blue oyster mushrooms and radishes from the local market so I made pulled mushroom bahn mi sandwiches along with fresh jalapeño and cilantro from the garden. Shredded mushrooms sautéed in tamari sauce and then Newman’s own BBQ sauce. Accompanied with an unripe ataulfo mango/onion/cucumber and cilantro salad all shredded on a Japanese mandolin to get it nice and fine. Unripe mangoes work best as otherwise it’s way too sweet and you need some coarse salt there too. Assembled the sandwiches on toasted ciabatta rolls topped with rice wine pickled radishes and carrots and a spoonful of Moishes coleslaw from Costco and sliced raw jalapeño for heat.

Really nice meal. Crunchy sandwich with sweet/sour/hot flavours.
