Two Day Ride Ideas

Suggestions for a two day ride, late September, midweek? Heading from Peterborough area will overnight somewhere (no camping) then head back. I'll say 600km per direction would be the max for this trip. Overnight location doesn't need to be fancy, just somewhere that has food and a chill place to enjoy some whiskey that we'll bring. Ideas?

if US is fine then Adirondack’s are also really nice and have amazing fall colours too.

The Gatineau region where I just was last weekend is really beautiful and tons of nice riding and places to stay.
