Unless you going with ape hangers, most bikes have a bit extra length on the cables. Maybe re-routing them will help with length. As long as the bars aren't much bigger than stock. You should be fine. If your bars are mounted by two clamps any motorcycle bars you see for sale will mount up.
 
Be careful of the diameter of the bars. Generally "Metric" bikes take a smaller diameter handlebar, as opposed to Harleys which take a larger diameter handlebar. Or in other words, if you like a style which is primarily used on a Harley it maybe to big around to fit a Japanese bike as an example.
 
For what it's worth I have a brand new 28mm LSL handlebar that was shipped to me by mistake. Retailer doesn't want it back, so I can let it go for cheap.

try to get bars that are designed for your bikes controls.

by this i mean that some (almost all) controls need to have a pin that goes into the bars to stop them from rotating.
cheaper bars done have this, but you can measure and drill it yourself, not a big deal.

ive installed some bought ones and made a few, but dont have the equipment to make them right now.

heres 1 set i worked on with a buddy. its another buddies bike....dont ask where the speedo is...
