I'm a fast learner, and if you're an expert, I'll pay good money for lessons and answers to my questions.

We could even do this remotely, Mac 2 Mac screen sharing and VOIP.

Have you tried a good tutorial site like Lynda.com? They have some great tutorials on almost any program out there (that is worth taking a tutorial).
 
How much are you willing to pay?

I have 7 designers that work for me, I'm sure one of them would be interested.

I would also recommend Lynda.com, its reasonably priced for a month subscription. At least you could get the basics down on your own, and then consider if you need one on one training, or just look up effects and techniques on the web.

A professional would only be frustrated if you had no basic knowledge. I do flash and deal with Illustrator Designers. I use the program almost daily and they always sigh with frustration watching me lol.

Lynda is a solid base.

This is a very good point. My wife has been trying to get me to teach her Final Cut (hate it), Avid and Photoshop but I've told her that until she gets the basics we will only end up in a fight about it.

Dumbing down the basic concepts and terms can get really frustrating.

I'm going to check out Lynda tonight. I like to think I know the basics. I've been using photoshop for web design for the last 6 years. But for this new project, I need to figure out how to wireframe and prototype in Illustrator. (unnecessary, I know... but whatever.. it's freedom).

just because some one is good with a program doesn't mean they are excellent teachers

i think the OP is counting on his ability to be a quick learner and be able to learn even despite the fact that someone would be a terrible teacher.

try googling the topics you need to learn.
iam sure there are webvids and tutorials and articles that can assist you.
