Sweet bike - and since this is now an unintentional oil thread, I will add my engineering-experience-ridden-opinion that may or not be useful to you.
Manufacturers design a machine to be used within a certain envelope of operation. If you stay within the intended use of said machine, you should ALWAYS follow their recommendations, as that will maximize the lifespan of the machine, and mitigate any risk in terms of warranty.
That being said, if you step out of the designed intended use of the machine (in your bike's case; excessive track use, modding engine internals like cams or valves, FI, offroading, maybe REALLY long touring, etc.), then I would run a more appropriate oil for those conditions.
If you're gonna use it like a typical Ducati fair-weather-rider guy (SHOTS FIRED!), then run it with whatever they recommend.
