Welcome to the forum! All great advise here when it comes to picking up your first bike. Your M2 test (assuming you're taking a safety course from an institute) should allow you to try on multiple bikes. So, if you prefer one style over the other you'll know.

I have a HWK pant, below is the armour that came with it (yellow ones). The black is from my Dianese. Like @Klaatu mentioned, the armour isn't great. Not complaining - I used it for a season and I paid less than 50 bucks for it.
Under normal riding circumstances, you will be putting yourself at risk if you do that. I would keep my legs on the peg until the bike comes to a stop. My above comment was meant on a lighter note. If you're racing, all of the above + looks cool. :)

Did River Rd both ways today. The slow right-hander (from Horning Mills side) had dirt/gravel mid-corner. Not having oncoming traffic helped. The pavement is in great condition but the speed limit is now 50 for most parts. I remember it used to be 60 before?

Wow, great trip. Thanks for sharing! I actually did this trip solo around the same time as you, stayed the night at an Airbnb. Some of the roads really impressed me. I aspire to be like the dude on 600rr, touring on a SS bike. Not sure if my wrists and back would agree.
