If you payed with PayPal you can file an "item not as described" claim. You're still going to have to pay to ship it somewhere, but it's better than eating everything.
Personally I'd be on the phone with them until they fixed it. You shouldn't have to pay anything extra because they made a mistake.

To be fair, there are probably $2000 in LEDs on the bike
I always do 3 things before starting work I've never done before:
- Read that section of the service manual. Do you have one?
- Look at a parts diagram. What year is your bike?
- See if I can find any videos on youtube.
After I've done all of those I have a pretty good idea what I'm getting...
I just noticed you already found studio cycle. Town moto is worth checking out if you're on the way past or don't mind the trip, but they have a lot of expensive hipster gear and a smaller selection.
If you go to cycle world be warned: they are hit or miss. Some people like them, others hate...
The closest you'll get to downtown are Town Moto and Studio Cycle Group. I believe they're Ossington/Queen and Keele/Dundas respectively. Selection isn't too bad, but it doesn't compare to those outside the city. If you can manage a trip to Oshawa you can hit GP, Royal, and Regear in the same...
I would expect that your tach is electronic. Usually it's the speedo that might not be, as it can be a cable running to the front wheel. Do you have a wiring diagram?
I bought the exact same one but under another title for my R6. My problem was that there aren't different speed and tach wires...
My guess would be the temperature sensor is for the rad fans, and possibly to kill the bike if it's overheating to the point the engine is going to be damaged. I'm not sure though. I had a quick look for the service manual and gave up after 30 seconds.
Throw it out. They might get another one. Throw that one out too.
For anyone still in doubt:

Dino is awesome! I stumbled upon him while I was looking for some videos on LED dash lights. The episode he did on the LED idiot lights on his Sabre came up, and I went on a bit of a binge watching the whole thing from the start. I've been following along every weekend since. He definitely knows...
Some news today. Pulled the trigger on some good condition used forks. Chatted with the guy on the phone to make sure he's not a Nigerian prince and he seems legit. He's going to ship them over the next few days so hopefully I'll be back in action around this time next week at the latest.
