Honestly I think you're kind of overthinking it. My next bike happens to have ABS but I, along with everyone else that rides, have been fine for years without ABS. People have been riding for a few decades now without ABS and have been just fine. It's a new feature, sure it'd be nice to have but...
It's still worth getting your M as soon as you can. You won't see insurance benefits immediately but I know at least 6 years after your M you do get some big breaks.
Hope you recover quickly. Those bikes are really nice, I saw a few of them in person when I ordered my bike but unfortunately I didn't get to see one in red. Hopefully they have some available stock for you though, my Ducati seems to be taking a while to get to Canada.
