Rode Tail of the Dragon, The Cherohala, and the Foothills Parkway as well as a bunch of other local twisties. Stunning area, best roads I've ever ridden. Rode two up with my wife and just took it easy, but I giggled like a school girl up and down the dragon. We just don't have roads like that here, and I was lucky that it wasn't too busy. Never had any pressure from other riders from behind and only had to pass a couple cruisers.

I'll be going down again with some friends next year and riding solo.

Outstanding experience.
 
It's a bit out of the way, but if you get a chance, check out TN 32 near Cosby. If you thought riding 2up was outstanding, wait til you go solo...
 
I just went to Tennessee as well. Spent most of my time in Pigeon Forge and Gatlinburg but took a trip out to the Cosby campground to do a hike. The area around Cosby was definitely nicer than the other two and the roads were pretty good. Too bad I took my Outlander with the gf and not my bike but it wouldn't have liked that much highway and probably can't do 2 up very well (never tried on this one). She didn't even want to take the 944. The Outlander probably dealt with the storms we got the whole way there a bit better than the 944 would have. Especially since the tires are getting bald.
 
Now you know why riding in the northeast or driving a day to get to one good road in Ontario is a TWOT( total waste of Time)

I personally preferred roads in Virginia and West Virginia over what I did in Tennessee so far although I'm sure there's 10 times more still. Tail of the Dragon was a bit disappointing for me, somewhat repetitive, visibility not the greatest, crowded, and not much change in elevation; I like steep climbs best. But yes, our best Ontario roads wouldn't even crack their top 100. It would help if more of them were paved properly. All these hard packed gravel, tar and other weird surfaces don't work so well for sport bikes.

Yes that's correct. If you only want the paved section it becomes and out n back of about 11 miles coming from the northwest. Essentially it's as long as the Dragon, with about as many curves, but you may not see one other vehicle on it for the whole stretch. The scenery is also really beautiful and dense forest, typical of the Smoky Mountains.
Here's a bit more info on the road and the gravel side of it, of which only the small section getting to the US40 might be passable on your bike if it's dry. The further south you go on the gravel - this section runs for about 20 miles and it's a really twisty, mountainous road with no traffic to help if anything goes wrong. It was really nice however and I would suggest it to anyone on the right bike or just going slowly.
