I was planning on checking out Ashbridges Bay: http://www.beachesbia.com/Events.asp?opt=2&sopt=may
Wonderland also has fireworks on the Sunday. You'll have to pay to get in of course, and the park is always packed that day.
I don't know of any others off the top of my head.
