Turn Choke off and stalls

Hay everyone. Need some advice with regards to the choke. I put it full on when I start up, I have a Honda Rebel so I don't have RPM guage. I let it idle while I put on my jacket, helmet & gloves. A few min. Then I get on and slide it about half way off and start riding. My issue is when I try to put it all the way off. My bike will stall. Not sure if I'm doing something wrong as I am very new to bikes. Any words that may help me figure it out.

Will it do that when the engine is fully warmed up? What's the total engine run time when this happens, or will it happen regardless of engine run time?

Option 1: Idle speed is set too low - there will generally be an adjustment knob somewhere, either on the carb(s) itself or on a cable connected to the carb, if this is the case it will frequently be a plastic knob on the left side of the bike near the carb.

Option 2: Idle mixture is set too lean. Very common on older carbureted Hondas. The idle mixture screw will generally be recessed into a hole on the carb body on the bottom pointing straight up, just behind the rubber boot that connects the carb to the cylinder head. I don't know if that bike has one carb or two - if there are two, there will be a separate one for each. Turn this screw fully in until it seats gently and count the number of turns. Then turn it out but add half a turn more.

Option 3: Slow jet(s) are clogged. Common on a carbureted bike that has been improperly stored. Only fix is to take the carb(s) apart and clean the jets out.
 
Thank you for the ideas. I'll see if I can figure it out this week after work. If I can't then I think I'll bring er in to get a check up. My bike is a 2009 and only has 280 miles. The person before me never rode it so it may be good to bring in to change up the fluids, I think it's all old (gas too). Anyway - I thank you for the ideas and will give it a go to get er purring right. I may be new but I am addicted!

Shouldn't have to open it fully to start, especially on a Honda, Honda's are good cold starting bikes. Should only open it up about half way to start, and then be able to turn the choke off totally withing a couple minutes. Never ride with it half way open, you are flooding your engine and plugs, that's probably your problem.

Does your bike have a temp gauge? Once the temp is in the normal range (in the 1st bar usually) it should be able to idle with the choke off. As a previous poster said you may need to adjust the idle knob. I'm thinking you've flooded it by riding with the choke open. Either that and/or might need a carb cleaning.

Johnny how much $$$ is to get the carbs cleaned out and how long does it take? I'm talking here about a normal 600cc bike.
 
No I don't have a temp gauge - the only thing my Rebel has is a speedometer. From the first time I rode it I couldn't turn the choke off. Stalls. Think I'm going to bring er in 'cause I don't want to cause any damage.
 
Is this the first time the bike has been ridden for the season? I had this problem when I started my bike first time this season and it turned out to be me adding a bit too much stabilizer to the fuel. Burned off the old fuel and she ran like normal afterwards.
 
Yes it is the first time I've been on this year. Just bought it. The girl I bought it from said she put stabilizer in the tank. I was wondering if that could be it too. Got a full tank in there, maybe siphen it out and put some new gas in.
