A skilled rider takes a corner at a safe speed not as fast as they can.

This is very true. Just be aware that "as fast as they can" varies very widely depending on bike and rider capability. "A safe speed" for someone with considerable experience is quite possibly beyond "as fast as they can" for an unskilled rider.

FWIW I've never touched a knee down on the street. Not in 20+ years.

You just never know when the conditions could change on a piece of road that you have ridden for years. A bikers biggest downfall is overconfidence.

That's the truth. It shouldn't be used as an excuse for not learning how to handle your bike, though - but that's best done at an advanced riding course, i.e. at the racetrack.
