So it seems thanks to all your advice (thanks so much everyone) I'm down to a 1250 Bandit, the Triumph ST and the FJR.
Went to see an 05 Bandit last night. Nice, though would want one where a lower fairing is available.

Looks like the FJ will be the most comfortable riding position for me. the others would be close runner ups.


If anyone knows of anyone selling something (pref. in black), let me know.

For 2010 the Bandit was renamed the GSX1250, and went full fairing. Here's an example with full luggage, not too many kms, and a decent price (no idea of actual condition though):http://www.kijiji.ca/v-street-cruis...sea/603292973?enableSearchNavigationFlag=true
 
I have a second gen FZ1. Still getting used to it, but it ticks a lot of your boxes.

If you're leaning more towards the sport side of sport touring, I'd look into Ninja 1000, Sprint ST, or the FZ1. The FZ1 can be found for dirt cheap compared to almost anything else.
 
If you're coming from a vstar 1100 then consider a gsxf 650. Same comfort and riding position as the 1250 but costs less and less to insure. Compared to the star it will still be a considerable gain in power and lots of great luggage options. I made the switch from a Virago 1100cc to a bandit 600 and the power difference was plenty to satisfy in comparison.
