Just a few random thoughts based on the original situation and some comments made here.
1) Although you say the sales rep agreed to push back the pick up date, did the original contract include a final payment due date? If so the dealer may be within their rights to keep your deposit if you didn't pay the bike in full by that date regardless of when you decided to pick it up.
2) What has been the dealers response when you asked for your deposit back? Will they allow you to apply it towards another purchase (bike or accessories)?
3) To the person asked who owned the bike (dealer or Kawi Canada) it would be the dealer. To my knowledge Kawi doesn't "consign" its bikes to the dealers to be sold.
4) Assuming you have exhausted all attempts at getting your money back (dealer/Kawi Canada) try the BBB. I've had great success getting results using them. Most businesses don't want bad reports on their BBB file.
