I'm interested in doing your oroiginal 2 days trip, never been in Catskills, are the roads nice and twisty ?

There are many nice roads around the area. And all of them are better in term of condition, twist or traffic (little to no traffic). You have to check it yourself whether that's what you like. I personally like anything from Olean, NY all the way down to West Virginia and Virginia area, or Williamsport, Pa East to Woodbury, NY area.
Upstate NY and Vermont has nice roads, but it is too much hwy riding to get out that way.
