I was in Texas on business a couple of months ago and rented a Harley. Only had time to do one of the sisters. Awesome road with lots of restaurants geared towards bikers.
It would take less than a day to ride all 3 sisters and you probably would only need 2 or 3 nights in Hill Country to see everything. IMO not worthy of a destination since the rest of Texas is flat. Worthwhile to do if you're going to be out there though.
Last year the Squeeze & I took a week to ride Deals Gap and lollygag back home on the BRP. This year I'm wondering if spending 2 weeks to get down and back to TX hill country for the sisters x3 is worth the effort. It would mean passing through some of the southern US which intrigues. The alternative is a two week repeat of last year spending more time in the same area on good roads as well as getting a swim in the Atlantic at some point.
If 2 weeks gives you enough time to get down there and spend a couple of days riding in Hill Country then go for it. The Texas landscape is something different and worthwhile to see. I'll PM you some info.
Alternately, if 2 weeks isn't enough time to make the trek you may want to look into riding the Ozarks in Arkansas. Supposed to be nice roads there and it's down south without being as far as Texas.
