I usually do one of two things:
1) Use a generic backpack and strap it to the bike.
2) Use a messenger bag: easier to put on/take off, and carries the weight lower and more comfortably. Mostly I use it when riding bicycles.
You're right - 3rd gear was your mistake.
In fact, it is best to always be gearing down as you're slowing down so you are always in the right gear and have power available in case you need it. Plus blipping the throttle is fun and sounds cool. I even do it in my car.

If the convenience/utility/safety of a car is worth less than 2K for you then for sure sell it.
A small light dual sport is easiest to manage in the slush and easiest/cheapest to manage when it gets dropped.
Just remember that there is a MUCH higher chance in winter of a car sliding/not...

I'm also looking for a trailer for 2 dirt bikes. I browsed around a bit but everything I see is pretty expensive!
I've seen some frame mounted electric motors that let you use the bike's gears. Then you can offroad the sucker without worrying about destroying the hub motor. And I guess on downhills you could probably go faster than a 125! (if you have the brakes and the balls)
