I don't agree with the comment that a 125 is hazardous in GTA traffic. OP, you would definitely get more use out of the 250 (you'd outgrow the 125 sooner than a 250) so I would personally wait until you can get the 250. Check on insurance first, of course...

I always do that at red lights because I get bored just sitting still. :) It's a very good way to learn clutch control and how to feel when the clutch engages and will make your shifting smoother.
I'm not sure on the cc because I've only been on one once and it was just in a parking lot but it is very easy to wheelie when you put it into second without letting off on the throttle. They don't have a clutch so to switch gears, you just let go of the throttle and stomp or kick up. The gears...
It just takes practice. You will get to know the limits of your bike hopefully without experiencing the actual limits in a bad sense. If you wanna go for a ride sometime, let me know. I'm pretty free most of the time.
