80cc to 125cc 4 strokes, are great for learning. Not sure you'll fit anything decent into a Mazda 5 though. A Honda XR 80 won't fit in the back of my Xterra, and it's significantly bigger than a M5.

Not true. It works fine on groomed trails. I've ridden a timbersled in deep snow, and on groomed trails.

Sizes across brands are never universal. I've got helmets ranging in size from medium to xlarge. But, to each his own. I've bought brainless things online, but mostly I go visit my local shop. I've built a decent enough relationship with the sales and parts guys, that I get a decent discount...

Any dirt bike will get you through these trails with no problem. Rider ability will dictate how you finish. Chances are the guy who wins, would have done so whether he was on a 2t KTM woods bike, a big old XR650, or a tame, road legal 4t 250cc. Run what you got, and have FUN!!
