Another Winterizing Question

This winter I am going to paint my bike and will have to remove the gas tank while it is winterized.

Last year I filled the tank with super, added stabilizer and put the battery on a shelf in the garage. Come spring the bike started without hesitation. I don't want to get into how bikes should be winterized, just how to adjust for not storing it with the tank off.
 
Last winter I had my tank off the bike for an extended period of time while doing my valve clearance check. I kept the gas in the tank to prevent any corrosion from taking hold, clamped off the gas lines so gas wouldn't leak out, and stored the tank on a shelf in the same orientation as it would be in on the bike.
 
To clarify, I'm painting the fairings and tank. I'm pretty sure that leaving the tank full isn't an option. Should I just fill it back up when it's done or is leaving it completely empty really going to hurt anything?
 
The other option is to spray some fogging oil inside.



So last night I did this and used the fogging oil. Not really sure how this stuff works. Does it actually create a fog of oil inside the gas tank? The reason I ask is because with the shape of the tank I was definitely not able to spray every surface of the inside of the tank just from the gas cap and I couldn't actually see a fog inside.

Remove the fuel pump and spray from the bottom as well.
