I assume the stitching on your jacket is white. The stitching may not take the dye very well. I'd try dying the stitching first before you dive in.
But yes, remove the sealer coat or the dye will just sit on top.

I also ride a CB500X. I commute about 50km each way to work on it. It revs high at highway speeds which always makes me try to shift into 7th and tops out at around 160kmh. Other than that, I can't see how it's not a capable tourer/commuter especially for a beginner.
+1 for Resurgence jeans. I've had them for 2 seasons and they're great. The stretchy material is very comfortable. I've done many full day rides in them. Probably more comfortable than regular non stretch jeans.
I've tried a few different foam and silicone plugs. Settled on the 3M E-A-Rsoft Yellow Neons. Most comfortable by far. I prefer disposable so I don't have to jam funked up plugs back into my ear.
