The dirt is very easy and will be hard packed and almost like pavement
During the day we will run some pavement only sessions for guys who want to skip the dirt. We want everyone to come and enjoy

Most likely nothing. If you fall over then the overflow lines will drain into the can. Some bikes consistently leak - one of the regular racers with a yamaha 450 has to drain his catch can after each moto...
Once you get your catch can setup check it after a good ride and see
It'll take you a while to find your lean angle limits.... it'll lean way further than you think.
Wait till you get the big brake, so much better its incredible!
Get some delrin round stock and make some? you seem handy with making other tools and stuff...
I don't actually use bar end sliders. handguards are good enough but I'm sure you want to minimize possible scratching

That is a good way to go just make sure the catch can is still vented. The catch can cant be completely water tight... if you plug off all the vent lines the carb wont work. the holes need to be on the top so that the bike would have to be completely upside down for gas to leak out...

Go with the cycra pro bend handguards but get the low profile shields. I have the acerbis but they suck. The mounting hardware is junk - I swapped it out for enduro engineering mounts. The wrap around alumunum is weak and bends easy. The cycra is much better all around and has a bunch of...
Since supermoto is so small at the moment there is minimal places that stock anything supermoto. pete @ supermoto specialites found this out the hard way trying to cater to a supermoto specific crowd. He can still special order stuff for you supermotospecialties@rogers.com

The 310mm rotor is a standard that beringer uses. The 4 and 6 piston ktm hardparts calipers you've seen dont need relocation brackes since the calipers are designed already spaced out fo the 310mm rotor.
