Just to be clear, I'm pretty sure Ted's is doing things right. Both Ted and the other mechanic (not sure of his name) put the barrings in, so I'm pretty sure it has something to do with the alignment being off and not improper installation.

Check the charging system with a multimeter. You should be getting 13.5 - 14.5 volts when reving, if not then something is wrong with your charging system.

I had an older bike that did something like this. Problem was the ignition switch. It was dirty and wasn't making a complete contact, so once in a while, while driving the bike would "shut down".

Checked and lubed speedo cable. Its still making a sound, kinda like a ting, ting, ting sound like hitting a steel drum every once in a while. Does seem to be linked to speed or breaking or anything.
