I would run synthetic all the way. On your vstar the exhaust must be removed to change the oil. You can run an amsoil oil and filter at a 10000km change interval on that bike. The money that you spend on oil will be saved on labour.
The oil level flash could be due to the oil foaming under high heat causing the oil level sender to give a false reading. I would try switching to a high end oil like Amsoil. I would run 10W40 because a good portion of our riding season is cold. BTW GP Bikes sells 4L jugs of amsoil 10W 40 for $58.
I buy an amsoil oil and filter from GP bikes and run it for 10000km. They are the cheapest spot I have found so far. It costs me less to run synthetic than dino oil.
