If you want to avoid some of the congestion on Lakeshore, North Service Road off the QEW is a good alternative with usually little traffic on the weekends, and each segment has some twisties. You can take it anywhere from Dorval all the way to Brant, except between the Bronte and Burloak where you just hop on the highway for one exit.

Late morning start for me, will run around the escarpment in Milton
Then across to Georgetown and stop for coffee here:
Then head up through terracotta, forks of the credit, then north to Hockley if the feeling is there.
Can meet in Georgetown, or the store at forks/Belfountain.
Of course, I am open to other suggestions as well.
