While the Weestrom has a huge tank and for which I get over 500 km highway (a record 687 km to empty - don't ask!) before refueling, the seat tapers down and the knees do not hug the wider sides of the tank. The first generation Versys has a very narrow profile and narrow tank which might work for you also. Not sure about the new Versys'sss.....
I can offer an opinion that it is not overly narrow between the legs
of course OP can try it, but it's probably not going to work for him
pillion seat is also a poor choice for dedicated 2-up riding
