Why does this happen?

I think good body positioning, (and reflexes/familiarity with losing rear traction), can help in saving yourself during these situations. My motorcycle experience is limited (~7 years commuting), but my bicycle experience is extensive, and I've lost traction a few times on the street (corners in the wet, mostly) but was able to recover by easing on the throttle, and maintaining good position.

bear-in-mind that my experiences aren't nearly as drastic as the videos
 
3 things can happen with too much throttle off a corner.
1- Rear Tire never regains traction and you end up in the ground (low side) (second best scenario)
2- Rear Tire regains traction and you are able to control it like in the video (best case scenario)
3- Tire regains complete traction and you are catapulted 10 feet in the air (High Side) (Worse case scenario)

With so much that can go wrong on the track it's a miracle less accidents happen

More of a calculated risk that a miracle
