My car tire size 215 55 17

Want to put 16" rims with winter tires

What tire size will work best?

215 60 16 or 205 65 16? Or is there a better size?

215 55 17 actual tire size is 26.3x8.5 inches. 215 60 16 is 26.2 inches high same width. 205 60 16 is 25.7 inches high and only 8.1 inches wide.
 
I go to TireRack.com to find out what sizes fit my car. That makes life easier in finding what fits, and what doesn't fit so you don't waste your time.
 
26.5 x 8.1. It's a matter of choice if you want the narrow tire or not. Some car manufacturers recommend a more narrow tire for cutting through snow and slush. My own tire guy asked the question of whether I wanted a narrow tire in my Tundra. I ended up getting the size that came with 18" wheels on an SR5 Tundra. My Limited has 20's for summer rims.
 
The difference in diameter is negligible in either case, however 215/60 will be closer to the performance characteristics of the original size than 205/65. A lot of tires with 65 sidewall ratio are also not rated higher than T for speed whereas 60 ratio will usually give you an H option, even for winter.
