This is Dean Segovis, a mechanic in North Carolina and general overall fiddler with everything from bikes to electronics.

Last year, he had a series of Youtube videos about cafe build from an old Honda Sabre.

He's really easy to learn from and is just a good teacher.

This year, he's completely rebuilding a 73 CB750 from baskets of parts.

He's really good at doing things properly, troubleshooting and hacking some specialty tools for cheap.
If you ever wanted to really get into motorcycle mechanics, this is a really good channel. He's not selling anything, and has really practical advice.

Dino is awesome! I stumbled upon him while I was looking for some videos on LED dash lights. The episode he did on the LED idiot lights on his Sabre came up, and I went on a bit of a binge watching the whole thing from the start. I've been following along every weekend since. He definitely knows his stuff and does a good job of explaining it in layman's terms.

The video quality is really good too. It's not just some guy holding a camera in one hand and trying to work a wrench with the other. I can't imagine how long he spends setting up all the shots and editing the videos afterward.
