3 day trips

Lake Placid NY via Ganonoque, across Vermont 17, over to the Kancamangus highway and return, avoiding anything that tractor trailers would like (straight).
Base out of State College and you have a lot of roads in souther PA that are a stretch from the north of the state.
You can also do Skyline drive on a 3 day. This time of year get rolling early and you've got a long range.

I based second day out of Harrisburg - cheap places and immediate jump onto slab and then into good roads.

There is an Ohio thread here that will allow a three day.
