For Track Use - Motul 7100 VS. 300V ?

I've been running Motul 7100 (10/40) in my 750 simply because that's the oil the previous owner used, so I stuck with it.
Just picked up CBR600 as a track bike and I have no idea what kind of oil is in it now or how old it is.
I'll be doing an oil change this weekend and I'm wondering which grade I should go with.

The 7100 and the 300V are both full synthetic oils, so what's the difference between the two?
I know that the 300V is double ester, but what does that translate to?

Not quite sure to be honest.
Depends on how often I get out there, I guess.
I was originally thinking of going to the track every other weekend, but if I get the bug, it might be every weekend.
Maybe every 3/4 track days? Or is that too frequent for a new track rider?
