I am curious for how long I can ride a bike with a European Union plate in Canada. What would be the terms and regulations?

If you are Canadian you are not suppose to drive a vehicle in Canada that does have Canadian plates, unless its a rental and you return it within 14 days or it is imported by you and you need to get a Ontario temporary plate within 2 business days.
I found out about this when on Sept 11 my flight was cancelled, I was stuck in the US and bought a bike there to drive home.
On the other hand why do you want to drive with a Euro plate, its like a "check me" sign for the Police behind you.

Um I'm Canadian and drive my bike to Canada even though it has South Carolina plates on it. Never been hassled at the border; I just hand them my Canadian passport and my US driver's licence.
The issue with rental cars is that if you rent a car in say Buffalo and want to bring it to Canada, it is supposed to have Canadian plates on it. If it doesn't, Customs can refuse entry of the car to Canada unless you pay all the taxes and fees associated to importing it into Canada. They have no proof you will return it to a rental agency so err on the side of caution. Most major rental companies will have a Canadian plated vehicle for you to drive, if you let them know ahead of time.
To be safe, I'd probably get a 10 day temp regi for the bike. To be safe.

And? Is it a licenced Canadian driver who brought them across the border? A Canadian can drive a US plated vehicle, the issue is with Customs, they don't like you bringing them across the border.
If it helps I have gotten my information on this from a very close friend, he teaches law to customs and immigration officers.
Customs has never given me a hard time driving an american plated vehicle across the border (into Canada) with a Canadian driver's license.

A Canadian plate is legal on a Canadian registered vehicle to a Canadian driver.
A US plate is legal on a US registered vehicle to a US driver.
An EU plate is (presumably) legal on an EU registered vehicle to a EU driver.
Or not?
So if you live in the EU and have an EU registered vehicle and you bring it here then the EU plate is legal.
'Course, it will be subject to all the restrictions about how long the vehicle can be temporarily imported into this country - and there ARE such restrictions. But that's another matter.
The U-haul trailers have legal Arizona plates because that's where they are registered.
