ATC's are lighter and more nimble than ATV's. The turning radius of an ATV cannot even come close to that of an ATC. Unless you are a mud bogger where 4 wheel drive is needed, ATC's beat ATV's in every other area. The only other thing ATV's have going for them is that they are more stable (which is why ATC's were banned in the first place) but a good rider on an ATC never flips his trike.
Here's an interesting quote from the ATC history books:
In 1984, Honda's ATC250Rs started just behind the motorcycles rather than from the very back of the starting order in the Baja 1000, Honda-backed ATC250Rs finished first and second in class, putting them fourth and fifth overall. Nothing on four wheels finished ahead of the ATCs.
Of course, that being said, there is definitely a novelty factor that goes with restoring, maintaining, and riding ATC's.
For the same reasons we motorcyclists call car drivers "cagers" and feel proud to ride on two wheels - we ATCers will always proclaim "3 wheels are better than 4!!!"
