Police will pursue cars for a longer period of time because they can keep up, most police cars have top speed limits of between 220km/h to apporx 235 km/h depending on the car and the rear diff gearing.
Most 600 class ss have a top speed of 240km/hr, a 1000 class bike will top out somewhere between 280-300km/hr.
Remeber that if a cop decides to chase and something goes wrong(ie. the biker crashes, the cop crashes etc..) the whole chain of command will be held responsible, not just the cop who was driving. Why would a police officer risk his job/career for a stunt driving charge or at most a careless driving charge? Odds are that if you are riding in a large group, they might pursue longer because they know that someone will stop, but if its just 1-3 bikes, they won't even bother.
