I was in a similar situation. Except my uncle survived fortunately, albeit with permanent (but not severe) brain damage.
Best advice I can give you is slow down, wait until you're 18 to see if your fascination with motorcycles is still strong.
Your mom is not out to get you, you need to understand that. The death of her brother obviously caused her severe emotional trauma, and seeing her son go near a motorcycle may be unbearable for her.
Reason with her calmly, don't argue. Take all the precautions to try and show her you're serious and responsible. Buy full gear, insurance, and the bike with your money (even if they want to buy the gear for you). That'll show them you're making a responsible decision and you're serious about this, not just making an impulse buy.
With that said, you'll still be able to get licensing from the age of 16. You don't need parental consent, just the money to do it.
As frustrating as it may be to reason with your mom calmly, just remember how hard it must've been for her to lose her brother, and don't let a stupid crotch rocket get in the way of your relationship with your mom.
