anyone know of a shop that is skilled at dialing in Mikuni carbs?

Friends told me to go with Dell'orto as they are easy to set up, but no, I just had to be different. I went for a Mikuni. Its on a 2-stroke. I cant get it dialled in as nicely as I would like. I need experienced help. Can anyone recommend a garage that knows their way around a Mikuni, and 2 stroke engine, and would have jets and needles on hand? Possibly someone who deals with ATVs and dirt bikes??
